Mediterranean Christmas Eggs

A classic take on the Middle Eastern dish "Shakshuka." This egg brunch is full of flavor and the perfect holiday brunch.

Ingredients
  

  • 1 tbsp olive oil
  • 1 small diced onion
  • 1 cloves pressed garlic
  • 1/2 cup diced red pepper
  • 2 tsp cumin
  • 2 tsp paprika
  • 2 tsp chili powder
  • Salt & Pepper to Taste
  • 1 tbsp tomato paste
  • 1 can Whole Tomatoes (skin removed)
  • 1/2 cup feta or goat cheese
  • 1/4 cup cilantro
  • 1/4 cup parsley

Instructions
 

  • Heat olive oil in a medium pan.
  • Add in onions, red pepper and garlic.
  • Cook off veggies until they are almost soft.
  • Add in spices and cook until aromatic, continue to add the tomato paste and combine well with the mixture.
  • Pour in the whole tomatoes, break up with spoon and combine with veggies.
  • Cook off the sauce until the veggies are soft and starts to cook down and thicken slightly.
  • Make small holes in the sauce for each egg and pour in/break in one egg at a time.
  • OPTION 1 Cover and let cook for 5- 7 minutes, or until it is to your liking. For softer yolks, shorter cooking time; harder yolks, longer cooking time.
  • OPTION 2 Once the eggs are in the sauce, place under a medium broil and cook until eggs are to your liking, soft, medium or hard.
  • Once eggs are close to done, break feta or drop in goat cheese evenly on top of the eggs and sauce.
  • Place under broiler for 2-3 minutes to melt and brown the cheese.
  • Remove and sprinkle fresh herbs on top.
  • Serve immediatly and with warm pita bread or naan.
