Heat olive oil in a medium pan.
Add in onions, red pepper and garlic.
Cook off veggies until they are almost soft.
Add in spices and cook until aromatic, continue to add the tomato paste and combine well with the mixture.
Pour in the whole tomatoes, break up with spoon and combine with veggies.
Cook off the sauce until the veggies are soft and starts to cook down and thicken slightly.
Make small holes in the sauce for each egg and pour in/break in one egg at a time.
OPTION 1 Cover and let cook for 5- 7 minutes, or until it is to your liking. For softer yolks, shorter cooking time; harder yolks, longer cooking time.
OPTION 2 Once the eggs are in the sauce, place under a medium broil and cook until eggs are to your liking, soft, medium or hard.
Once eggs are close to done, break feta or drop in goat cheese evenly on top of the eggs and sauce.
Place under broiler for 2-3 minutes to melt and brown the cheese.
Remove and sprinkle fresh herbs on top.
Serve immediatly and with warm pita bread or naan.
