- 2 Cups Chorizo Sausage (remove from casings)
- 1 Medium White Onion (diced)
- 1 Orange Pepper (diced)
- 3 Cloves Garlic (finely chopped)
- 1 Medium Sweet Potato (diced)
- 2 Cups Vertical Roots Canada Swiss Chard (rough chopped)
- 1/2 Cup Chicken Bone Broth
- 4 Eggs (local farm fresh for best taste)
- 1/2 Cup Vertical Roots Canada Arugula (ribbon cut)
Instructions
- Place Chorizo in a hot pan and cook off for 5-7 min or until browning.
- Add in Onions, Peppers, Garlic & Sweet Potato
- Once the meat is browned, add in Swiss Chard and 1/4 cup of bone broth
- Let veggies wilt down and cook until Sweet Potato is soft
- Crack eggs on top of the finished meat and vegggies and steam until desired cook. For a runny yoke 5-6 minutes will suffice.
- Sprinkle Arugula on top of each egg upon serving.
- Salt and Pepper for taste at the end. Chorizo is a spicier, fatty sausage and full of flavour so we suggest finishing with salt and pepper to taste.
