Chorizo Swiss Chard Skillet
A delicious brunch or lunch dish that will wow your family or guests AND fill you with nutricions greens.

- 2 Cups Chorizo Sausage (remove from casings)
- 1 Medium White Onion (diced)
- 1 Orange Pepper (diced)
- 3 Cloves Garlic (finely chopped)
- 1 Medium Sweet Potato (diced)
- 2 Cups Vertical Roots Canada Swiss Chard (rough chopped)
- 1/2 Cup Chicken Bone Broth
- 4 Eggs (local farm fresh for best taste)
- 1/2 Cup Vertical Roots Canada Arugula (ribbon cut)
Place Chorizo in a hot pan and cook off for 5-7 min or until browning.
Add in Onions, Peppers, Garlic & Sweet Potato
Once the meat is browned, add in Swiss Chard and 1/4 cup of bone broth
Let veggies wilt down and cook until Sweet Potato is soft
Crack eggs on top of the finished meat and vegggies and steam until desired cook. For a runny yoke 5-6 minutes will suffice.
Sprinkle Arugula on top of each egg upon serving.
Salt and Pepper for taste at the end. Chorizo is a spicier, fatty sausage and full of flavour so we suggest finishing with salt and pepper to taste.
