Broccoli & Arugula Date Salad

A raw, FAST, delicious side salad or lunch that is full of bright flavors with a homemade creamy dressing.

Ingredients
  

  • 4 cups chopped broccoli
  • 2 cups chopped arugula
  • 1/4 cup diced red onions
  • 1 small diced apple
  • 1/4 cup chopped dates
  • 2 tbsp chia seeds
  • 1/4 cup chopped walnuts
  • 3/4 cup mayonaise
  • 1 tbsp dijon mustard
  • 2 tbsp apple cider vinegar
  • 2 tbsp raw honey
  • Salt & Pepper

Instructions
 

  • Begin by placing all wet ingredients into a small bowl and mix well. Set aside.
  • Place all fresh ingredients for the salad into a large bowl and toss.
  • Pour dressing over the salad and toss well. Season with salt and pepper and toss again.
