Broccoli & Arugula Date Salad
A raw, FAST, delicious side salad or lunch that is full of bright flavors with a homemade creamy dressing.
- 4 cups chopped broccoli
- 2 cups chopped arugula
- 1/4 cup diced red onions
- 1 small diced apple
- 1/4 cup chopped dates
- 2 tbsp chia seeds
- 1/4 cup chopped walnuts
- 3/4 cup mayonaise
- 1 tbsp dijon mustard
- 2 tbsp apple cider vinegar
- 2 tbsp raw honey
- Salt & Pepper
Begin by placing all wet ingredients into a small bowl and mix well. Set aside.
Place all fresh ingredients for the salad into a large bowl and toss.
Pour dressing over the salad and toss well. Season with salt and pepper and toss again.
