Spicy Avocado Scramble Toast

A fast, full-of-flavour breakfast with a kick.

Ingredients
  

  • 2 tbsp butter
  • 2 tbsp whipping cream
  • 1 tbsp chili flakes
  • 1 avocado (smashed)
  • 1/4 cup sliced grape tomatoes
  • 1/4 cup goat cheese
  • 1/2 cup Vertical Roots Arugula (rough chopped)
  • 2 slices toasted or grilled sourdough
  • Balsamic Glaze
  • Salt & Pepper

Instructions
 

  • Crack 2 eggs into a small bowl, add salt & pepper, and whipping cream.
  • Heat a small pan, melt the butter, and add chili flakes. Let it cook off for 10-15 seconds.
  • Whip the eggs well as the chili flakes cook off. Add to the hot pan once ready.
  • Begin to slowly move the eggs around from the edges, slowly move back and forth, turning them slowly around until they are cooked through. For softer, wetter eggs, remove from the heat to finish cooking.
  • Once the eggs are cooked, begin to build the open-faced breakfast toast.
  • Place the avocado on the toast slices and smash it into the bread gently with a fork, salt and pepper to taste.
  • Split the eggs into 2 portions and place each 1/2 amount on top of the avocado.
  • Sprinkle the arugula over the eggs, place grape tomatoes around, and dollop the goat cheese on top.
  • Drizzle the balsamic over both toasts and SERVE!
