
Southwest Build-A-Bowl
Skip the $30 bowls when you eat out! Create your own EASY, quick dinner with all the delicious add-ons like pickled onions and charred spicy corn. Using a home-made southwest rub for the protein of choice, you will up your game AT HOME on budget and full of flavour.
Ingredients
Pickled Red Onions
- 1 large red onions, thinly sliced
- 1/2 cup white whine vineger
- 1/2 cup apple cider vinegar
- 2 TBSP honey
- Salt and Pepper to Taste
Charred Spicy Corn
- 1 cup canned corn
- 1 red pepper diced
- 1 tsp red chili flakes (or more if you like it spicy)
- Avocado Oil Spray
- 4 cups GRAIN – Cooked Brown rice, Quinoa, Barley, etc.
- `4 medium PROTEIN – Chicken Breast, Turkey Breast, Steak, Pork Loin
- 4 Cups Vertical Roots Romaine Lettuce Chopped
- 1/2 cup Vertical Roots Cilantro, chopped
- 1/2 cup Lime Vinaigrette
Southwest Rub
- 3 tbsp chili powder
- 3 tbsp garlic powder
- 2 tbsp paprika
- 2 tbsp orgegano
- 2 tbsp cumin
- 2 tbsp corriander
- 1 tsp Salt and Pepper
Instructions
Southwest Rub
- Combine all spices for the rub and mix well together. Spray the proteins with a little avocado spray and then rub the proteins all over with the spice rub. This can sit overnight or can be used immediately.
- Depending on your protein will depend on the cook. Using an air fryer is an easy and tasty way to cook all proteins, but a grill or oven will work just as well. Temping the meat will ensure the cook is safe and tasty. This will be the first step to your bowl. Poultry (whole birds, breasts, thighs, wings, ground poultry, stuffing):165°F (74°C).Beef & Bison (steaks, chops, roasts):Medium-rare: 145°F (63°C) – allow to rest for at least 3 minutes. Medium: 160°F (71°C).Well-done: 170°F (77°C).Pork (steaks, chops, roasts):145°F (63°C) – allow to rest for at least 3 minutes.
Pickled Red Onions
- Place the thinly cut red onions in a medium jar and push down so as much air is removed as possible.
- Place the vinegars, honey, salt, and pepper in a small pot and bring to a simmer. Cook until combined, and the honey is integrated. Pour the vinegars over the onions in the jar, and set aside.
Charred Spicy Corn
- In a hot pan, spray with Avocado Oil and add corn, red peppers, and chili flakes. Cook on high heat and continue to stir until the corn starts to blacken. A cast iron pan is perfect for this, but any pot or pan will work. Sprinkle in Cilantro, stir together and remove from heat.
Build a Bowl
- Now that all your toppings are completed, we can Build a Bowl. Youc an build in layers or you can build around the bowl. Your preference.
- Add 1 cup of GRAIN to each Bowl.
- Slice the cooked PROTEIN when ready to serve to ensure it's rested and ready. Place in each bowl.
- Place 1 Cup of chopped Vertical Roots Romaine in each bowl.
- Distribute the Charred Corn into each bowl evenly.
- In the middle, top with Pickled Onions, and sprinkle the remaining Vertical Roots Cilantro on top of those.
- Using our homemade Lime Vinaigrette lightly sprinkle over the bowl the desired amount. Light or Saucy…your choice!
