Crunchy Arugula & Chicken Honey Mustard Wrap
Eat CLEAN with this fresh protein and flavour filled wrap. The bright Vertical Roots Arugula, paired with a home made honey mustard dressing, will have you making your lunches from now on! Save money and add this to your lunches for a clean and tasty option.

- 1 Mini Food Processor
Ingredients
- 1 PC Protein Wrap
- 2 tbsp Goat Cheese
- 1/4 cup Chick Peas
- 1/2 cup Cucumbers (diced)
- 3/4 cup Vertical Roots Arugula
- 2 Whole Wheat Chicken Strips (cooked and diced)
Honey Mustard Dressing
- 2 tbsp Dijon Mustard
- 2 tbsp Extra Virgin Olive Oil
- 1 tbsp Honey
- 1 c;love Garlic
- 2 tbsp Apple Cider Vinegar
Instructions
- Place all dressing ingredients in the mini food processor and blend. Set aside.
- Place the wrap in the microwave for 10-12 seconds to soften the wrap.
- Spread the goat cheese down the centre of the wrap.
- Place the chickpeas on top of the goat cheese and, using a fork, smash them into the goat cheese. This will allow them to stick in the wrap, making it easy to cut and eat!
- Next, lay the cucumbers, whole arugula leaves, and diced chicken.
- Take the dressing and spoon it all over the layered ingredients down the center.
- TIME TO WRAP! Pull the left and right sides in and towards the centre. Take the wrap side closest to you and roll over the ingredients. Pull in tight and finish the wrap.
- Cut in half and ENJOY! Serve with the extra honey mustard dressing to dip.
