
Spicy Shrimp and Mango Salad Rolls
A fresh, delicious salad roll that can compete with your favorite restaurants. Fresh, healthy and full of flavour. If you want to skip the spice, just use cooked "ready to eat" shrimp and get the flavour from the herbs and dressing. Food is Flexible – make it how you like!
Ingredients
- 4 Rice Wraps
- 1 head Vertical Roots Romaine Lettuce
- 1 Fresh Mango (sliced thin)
- 1 Red Pepper (sliced thin)
- 1/2 cup Vertical Roots Cilantro
- 1/2 cup Vertical Roots Basil
- Green Goodess Dressing
Spicy Shrimp & Marinade
- 20 Raw Shrimp
- 1 Lime
- 1 Garlic Clove – minced
- 2 tbsp Chili Flakes
- 2 tbsp Honey
- Salt & Pepper
- 1 tbsp Extra Virgin Olive Oil
Instructions
Spicy Shrimp
- Combine all the marinade ingredients and mix well.
- Add in the raw srhimp and marinade for 30 min to 1 hour.
- In a hot non-stick pan, add the shrimp and cook for 2 min on each side. Set aside. Can be cooked ahead of time and refrigerated for future use. Do not overcook!
Salad Roll
- Follow the directions on the Rice Wraps, wetting them 1 one 1 as you use them, so they are pliable and can be folded easily around the fillings.
- Place one rice wrap on the counter or plate. Fill with the following in order:– 2 leaves of Romaine Lettuce– 3-4 slices of Mango– 3-4 slices of Red Pepper– 4-5 pieces of Shrimp– Sprinkle Basil and Cilantro on top of the veggies– Drizzle Green Goddess dressing across the top OR place on the side for dipping
- Fold in the sides, and roll away from you, tightening as you pull towards you, and finish the wrap with a tight flip. ENJOY!
