On The Go Tuna Bowl

Ingredients
  

Spicy Mayo

  • 1/2 Cup Mayonaise
  • 2 tbsp Soy Sauce
  • 2 tbsp Honey
  • 1 tbsp Sriracha

Cucumber Salad

  • 4 Mini Cucumbers (sliced)
  • 1/4 cup Red Onion (diced)
  • 3 tbsp Rice Wine Vinegar
  • 1 tbsp Crushed Chili Peppers

Tuna Bowl

  • 2 cups Cooked Brown Rice
  • 2 Portions Diamond Harvest Seared Ahi Tuna Slices
  • 1 cup Vertical Roots Leafy Greens (chopped)
  • 1 cup Vertical Roots Leafy Reds (chopped)
  • 1 cup Vertical Roots Kale Chips OR Healthy Crunch Kale Chips

Instructions
 

  • Start by making the Spicy Mayo. Add all the ingredients together in a small bowl. Mix well until the ingredients are combined well with no lumps.
  • Prepare the Cucumber Salad by pouring the vinegar over the sliced cucumber and red onions. Add in the Crushed Chilis and mix well. Set aside.
  • Prepare 2 bowls by shaping the warm rice around the edges and into the bottom. It should be a thin layer around the bowl.
  • Take 1 tbsp of the Spicy Mayo for each bowl and spread it over the rice as the first layer of the Tuna Bowl.
  • Mix the 2 chopped lettuces together and place it inside the bowl, spread out evenly.
  • Divide the cucumber salad evenly over the lettuce in each of the bowls.
  • Remove the Tuna from the packages, cut the pieces in half, or dice; however, you would prefer to enjoy the Tuna.
  • Place the sliced or diced Tuna around the bowl evenly on top of the lettuce and cucumbers.
  • Take the Kale Chips and place 1/2 cup in the middle of the bowl, slightly crushing them, leaving different size pieces to enjoy.
  • Finally, using a spoon, drizzle the remaning sauce evenly over the 2 Tuna Bowls.
