place the chicken in a bowl with a 1/4 cup of soy sauce and set aside for 5 min.
Heat a non-stick pan, then place the chicken in the pan, without any additional soy sauce or liquid left in the bowl. Turn to medium heat and cook.
Once the chicken starts to brown, add in red pepper and 1/2 cup of chopped green onions. Continue to cook and brown.
While the chicken mixture is cooking, place 4 tbsp soy sauce, rice wine vinegar, sriracha, black pepper, garlic, 1/4 cup of the chopped cilantro, and lime juice in a small food processor and blend until combined. Mixing in a bowl will also work if you do not have a food processor.
Once the chicken is well browned, add the nutty spicy sauce to the pan. Mix well with the chicken mixture and cook for 3-5 minutes.
Remove leaves from the Vertical Roots Leafy Greens and place on a plate. When the sauce is removed from the heat, you can sprinkle the cashews, remaining cilantro, and onions on top before serving.
To enjoy, place a couple of tablespoons of the chicken into the centre of the lettuce. Wrap the remaining lettuce leaves around the mixture and ENJOY!
