Orzo Spinach & Chicken One Pan Wonder

Delicious protein filled, nutrient rich dinner for your family. Everyone will love this cozy dish on a cold wintery day.

Ingredients
  

  • 1 tbsp Extra Virgin Olive Oil
  • 1 lb Chicken Breasts Cubed
  • 1 small Diced Onion
  • 3 cloves Chopped Garlic
  • Salt & Cracked Pepper for Taste
  • 2 cups Orzo Pasta
  • 2 cups Chicken Stock
  • 1 1/2 cups Half & Half Cream
  • 2 cups Chopped Vertical Roots Spinach
  • 1 cup Grated Fresh Parm

Instructions
 

  • In a large skillet, heat olive oil, then add chicken cubes and salt and pepper for taste. Turn heat to medium, cook for 3-5 minutes.
  • Add in onion and garlic with the chicken and cook until onions are translusent.
  • Once the chicken is browned off, add in the orzo pasta and stir until combined with chicken. Slowly add chicken stock and cream.
  • Bring to a boil, then turn heat down and simmer for 6-8 min or until orzo is soft and liquid is soaked up. Stir often and watch to ensure it does not stick to the bottom.
    (If you find you need more liquid or the orzo is underdone, add a bit more stock and/or cream to finish.
  • Once the orzo is cooked and liquid has been absorbed, add in chopped spinach and parm. Stir until combined and spinach is wilted.
  • Serve with additionally grated Parmesan cheese on top.
