Not your Mama's BLT

An elevated BLT with Warpspeed Bagels, honey-spiced bacon, and a homemade arugula aioli that can be ready in less than 30 min! All ingredients are available at the Old Strathcona Farmers Market every weekend Saturday 8am-3pm, Sundays 11-3 OR Tuesdays-Saturdays at their NEW General Store called The Side Door. Equipment

  • 1 Mini Food Processor
  • 1 Toaster or Grill

Ingredients
  

  • 2 Warpspeed Bagels (any flavor)
  • 6 slices Irvings Bacon (thick or thin variety)
  • 1 cup Strathcona Micogreens Brassica Blend
  • 1 large Lacombe Fresh Tomato thinly sliced
  • 4 leaves Vertical Roots Green Leaf Lettuce
  • 1/2 cup Vertical Roots Arugula Leaves
  • 1/4 cup Vertical Roots Basil Leaves
  • 1/2 cup mayonnaise
  • 1/2 lemon -juiced
  • 1/4 cup raw honey
  • 2 tbsp chili flakes

Instructions
 

  • In a medium pan, cook the bacon until nicely browned on all sides and turn the heat to low.
  • Mix the honey and chili flakes in a small dish and drizzle the spicy honey on both sides of the bacon, allowing the spicy honey to cook onto the bacon. Set aside.
  • Take your bagels and grill or toast them. Set Aside.
  • Using a small food processor, add the mayo, lemon juice, basil, and arugula to the mixer. Blend until combined.

Time to Build

  • Spread the Arugula Aioli on both sides of the toasted or grilled bagel.
  • Place 3 slices of bacon on the bottom half of the bagel.
  • Place sliced tomato on top of the bacon - as many as you wish. Ideally, 2-3 thin slices will suffice.
  • Add microgreens to the bagel on top of the tomato, and again, personal preference will be key here.
  • Top the sandwich with 2 lettuce leaves and place the top bagel on top.
  • If you want this to be spicier, drizzle more honey on top of the aioli before you add the toppings.
