Italian Grilled Vegetable Sandwich with Herbed Goat Cheese

This delicious grilled veggie sandwich pops with homemade goat cheese and fresh Vertical Roots herbs and greens. Nutritious with big flavour - you won't be disappointed.

Ingredients
  

  • 4 Slices Artisan Sourdough Bread grilled or toasted
  • 8 1/2 inch sliced Zucchini 1-2 zucchini depending on the size
  • 8 1/2 inch sliced Eggplant 1 eggplant would be more than enough
  • 2 Red Peppers quarter sliced and outside skin removed
  • Olive Oil or Avocado Spray
  • 4 Vertical Roots Romaine 4 large leaves
  • 1 cup Vertical Roots Arugula
  • 1/2 cup Goat Cheese
  • 1/2 cup Vertical Roots Parsley leaves and stems
  • 1/2 cup Vertical Roots Dill leaves and stems
  • 4 Cloves Garlic
  • 2 tbsp Extra Virgin Olive Oil
  • 1 Lemon for zest and juice
  • Salt and Pepper

Instructions
 

  • Preheat the oven to 425 degrees
  • On a large sheet pan, place slices of eggplant, zucchini and red pepper.
  • Spray evenly with Olive Oil Spray
  • Salt and Pepper generously
  • Place in oven on middle rack for 12 min
  • Turn over and place under the broiler for 1-2 min on high to get a charred burn on the edges
  • Remove from heat and cool
  • Place goat cheese, herbs, lemon zest from half the lemon and juice from half the lemon and olive oil into the mini food processor. Blend well.
  • Toast or Grill the sourdough
  • Spread Herbed Goat Cheese on 1 side of all 4 slices
  • Layer the roasted veggies split between the two evenly. Eggplant, zucchini, red pepper, arugula, and romaine lettuce.
  • Top with second slice, cut in half and serve.
