Blackened Catfish Lettuce Wraps

Ingredients
  

  • 400 g catfish fillets
  • 1 tsp olive oil
  • 4-5 leaves Vertical Roots Red or Green Leaf Lettuce
  • 1 quarter lemon wedge
  • 3 tbsp olive oil
  • 1 Lemon Juiced
  • 1 tbsp Smoked Paprika
  • 2 tsp Dried Thyme
  • 2 tsp Cayenne Pepper
  • 2 tsp  Salt

Instructions
 

  • Place catfish fillets in a container, mix all marinade ingredients in a bowl and pour over the fillets. Cover and put in the fridge, let marinate for 20-30mins.
  • Preheat frying pan until it just starts to smoke, add in the 1 tsp of olive oil, and gently lay the marinated fillets in the pan. Be careful as oil tends to spit at this stage.
  • Cook catfish for 3 mins. on each side. Before flipping ensure that there is blackened” color on each side. These are not burn marks, the blackened color comes from the spices in the marinade. You want a little black for color not completely burnt and not to overcook the fish.
  • Take catfish out of the pan and set aside to rest. In the meantime, lay out 4-5 leaf lettuce leaves on a plate for plating.
  • Once rested, slice catfish into desired portions and build the lettuce wrap. Served with a wedge of lemon.

Notes

Tips:
1. Light smoking pan is essential for the blackened color, just watch it as it can go from blackened to burnt in seconds.
2. It is important not to overcook catfish, as it is a lean fish, it can dry out pretty fast.
3. For extra depth of flavor you can grill or char the lemon before serving it with the wraps in the end.
